The Science on Blueberries

In unfavorable environments, the pathogen produces a biofilm around itself and then goes dormant. This can often be due to the presence of antibiotics or improper pH or temperature for survival. In the antibiotic groups,  a week after treatment, viable B. burgdorferi started to surface again. This did not happen in the stevia group, however, which appeared to be a complete kill off after seven days.

According to the University, they say we are not at a stage where we can prescribe whole leaf, liquid stevia extract to treat Lyme Disease and more tests need to be done.
That’s not to say you have to avoid it in your diet as there are many other health benefits!

So as you can see, when the right source is chosen you can still utilize and receive the benefits of the natural stevia plant. Don’t be fooled or fall for the marketing gimmicks and convenience of synthetic stevia products out there! Recipe: Plant Based GF Crepes

When we traveled to Paris last year, there was nothing more delightful and delicious than sharing a crepe while walking through the finest gardens or the bustling cobblestone streets of the city. When in Paris, you might as well toss your health ideals to the wayside every now and then and just enjoy all the culinary majesty it has to offer.

Yet, when we returned home I had this burning desire to replicate our beloved crepes and not only make them a dessert, but to turn them into something as nutritious as, let’s say, oatmeal. So I went online and looked up vegan crepe recipes and stumbled upon Earth of Maria, which is where the bottom crepe recipe is derived from and they are delicious. But you still need to have more than just a crepe, you also need a sauce and filling, and I wanted to create a complete and nutritious meal.

So I decided to use the new Catie’s Organics Maca Dutch Chocolate Protein Powder in a vegan, coconut cashew creme. The result was two decadent chocolate and vanilla sauces that are filled with plant protein, healthy fats and absolutely zero refined sugar, and you and your family can eat it for breakfast any darn day of the week.

So, let’s get to it!

Crepe Ingredients:

  • 1 3/5 cups buckwheat flour
  • 3 tbsp ground flaxseed
  • 1 tsp coconut sugar
  • 1/2 tsp salt
  • 2 1/2 cups almond milk

Vanilla Creme:

  • 1 cup raw cashews
  • 2 scoops Simply Young Creamy Coconut Powder
  • 1 cup water or coconut water
  • 1/4 cup coconut sugar
  • 2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp sea salt
  • few drops of stevia to taste

Chocolate Creme:

 

Instructions

Crepes

  • Add the buckwheat flour, ground flaxseed, coconut sugar, salt and almond milk to a large mixing bowl. Whisk the ingredients together really well.
  • Heat a large frying pan over a medium-low heat. Add 1 tsp coconut oil and add enough batter to the frying pan to cover the entire surface (around 1/4 cup per crepe). Cook for around 2 minutes, until it is easy to lift up the crepe. Flip, then cook for a further thirty seconds on the other side.

Creme

  •  Blend all ingredients in vanilla creme together till smooth, add more coconut sugar or stevia to taste if needed. Take half of the mixture and place it in a bowl on the side. Add the protein and cacao powder to the rest of the mixture and blend till fully incorporated.

Crepe Assembly

  • Have a large bowl of seasonal fruit and berries prepared. Add 2 tablespoons of each   sauce to the crepe starting from the center. Add a line of fruit down the middle (amount of fruit will depend on how large you want the crepes to be) then roll them up. Once all crepes are assembled, line them up on a dish and drizzle the rest of the sauces on top and add fresh fruit. This makes a beautiful and easy presentation for any brunch or party.;

R&R: A Prescription for Your Health

The ego loves to bypass the body’s need for sleep and rest. It thrives on the conditioning of society that places value on getting ahead and tireless effort, saying that a real successful person NEVER quits. We grow up thinking that our futures will be filled with disdain towards our bosses, as we sacrifice most hours of the day working towards other people’s goals and catching up on laundry during our weekend free time. We were never told that our quality of output is actually based on how well we love and treat ourselves, not how well we can sacrifice our human needs. And yes, it is true, that a real successful person never quits on their goals, but what you may not know is that they are savants at self care and they certainly know when to take a break.

Cutting on sleep to get ahead can be a pretty detrimental thing, however, if you are naturally one of those enigmas who only gets four hours of sleep at night and feels great, then more power to you. I’m assuming you take naps? Regardless, what this is about is listening to your body and understanding the repercussions if you do not.

Relaxation is different from rest but it is also just a important. Relaxation can be thought of as the passive activities that you enjoy. Such as reading a book, watching your favorite movie with your partner or kids, knitting, journaling, taking a bath, drawing, cooking, etc. These things have a very positive influence on your mind as they allow you to let go. Commonly, our brain is trying to compartmentalize, plan and control our daily circumstances and the only way to have balance is by allowing your brain to relax and sink into your positive, restful space.

-Coconut Vegan Whipped Cream-

Nothing says ‘holidays’ more than whipped cream accompanying a delicious and fragrantly spicy, baked dessert. But who wants to sacrifice the healthy eating trend they’ve had going on since summer? With some of us taking on our New Years resolutions early, it is nice to know that we have fun, healthy (and vegan 😉  options for our holiday feastings.

With just a few tricks, it is delightfully simple to make homemade Coconut Vegan Whipped Cream.

 

Ingredients:

  • 1 can full-fat coconut milk, chilled for 24 hours*
  • 1 to 2 tablespoons organic maple syrup to taste
  • 1 vanilla bean, scraped or 1/2 teaspoon pure vanilla extract

Directions:

  1. Chill the can of coconut milk in the fridge for at least 24 hours. Some cans can be “duds”, so it is always nice to keep an extra can in the fridge just in case.
  2. Chill your mixing bowl in the freezer for at least an hour before mixing
  3. After chilling the can, turn it upside down and open from the bottom. The water and cream will separate and you can pour the water into a container to save for later. *Vegan smoothies or coconut ice cubes are a good use for the extra water!
  4. Scoop the solid white vegan coconut cream into the bowl.
  5. Using an electric hand mixer, beat the cream until fluffy and smooth. Add in maple syrup to taste and vanilla.
  6. Place vegan coconut whipped cream in fridge until ready to use. It will firm when chilled and soften at room temperature. This will keep in the fridge in a sealed container for up to 1 week or you can freeze for up to 1 month. After chilling in the fridge, allow it to sit at room temperature until it softens slightly and then you can re-whip it as needed. Enjoy!
