Recipe: Super Immune Soup

This is our go to soup recipe for cold and flu season and it is especially applicable during this pandemic. What do viruses hate? HEAT! Viruses can absolutely not live in heat and that is why it is so important to raise our body temperatures at this time. Wear socks, a scarf around your neck and always be drinking a hot beverage or eating piping hot soup! Without burning your mouth of course… Viruses also do not like garlic and that is why we add a whole head of garlic to this recipe. Last but not least, we’ve also included our awesome Vitamin D seasoning powder, called Season D+. Which can be purchased on our website. Vitamin D is so vital for a healthy immune system and deficiencies have been linked to respiratory infections and flu-like illnesses. So we highly recommend it!

This is a great meal prep dish too, as it can last for days in the fridge. It contains all necessary proteins and you can fill it with as much veggies as you want! Alright, let’s get to it…

Ingredients:

– 1 bulb garlic

– 1 tbsp olive oil
– 1 half a yellow onion. Finely chopped
– 4 stalks celery. Finely chopped
– 1/4 cup chopped ginger root (can be left thick, in medallions)
– 1 tbsp black peppercorns. Whole
– 1 large can of diced Italian tomatoes
– 4 cups water
– 1/4 cup nutritional yeast

– 2 scoops Season D+

– 1 package of tempeh. Either chopped or crumbled
– 1 can kidney or garbanzo beans. Rinsed
– 2 tbsp organic vegetable bouillon
– 2 cups chopped kale
– Any other veggies you’d like to add
– 2 tbsp dried oregano

– 1 tsp cayenne pepper
– 1 tsp ground pepper
– 1 tsp turmeric (optional)

– Chopped Avocado (Optional)

Heat a large pot at medium heat. Add olive oil and garlic. Then add onion. Sauté for 5 min. Then add ginger, whole peppercorns and celery. Cook for another 3-5 min. Add canned tomatoes and the rest of the spices. Turn heat up to high. Once hot, add water and nutritional yeast. Cover pot and let it come to a boil. Mix in bouillon paste, add the rest of ingredients and cover. Keeping at a boil for ten minutes then reducing heat slightly for another 10 minutes. You may add a little more bouillon if you’d like a little more salt, but keep in mind a little does go a long way! Serve with your favorite gluten free or whole grain bread and add avocado for some healthy fats if you have it on hand!

Plant Vitamin B12

Vitamin B12 is an essential nutrient that mostly comes from meat, eggs, fish, oysters and dairy products and can be challenging to obtain from plant sources. It helps to keep nerve and blood cells healthy and also helps to create DNA, as well as promote carbohydrate and fat metabolism. Vitamin B12 deficiencies can also be linked to anemia, as B vitamins are essential to the absorption of iron and vice versa. Without adequate iron absorption you can begin to feel tired and fatigued. Vitamin B12 deficiency affects 1.5-15% of the public and though many do get enough from food, some do have problems absorbing it and if you are a vegetarian or vegan, your Vitamin B12 levels can likely be low.

Can you get B12 from plants?

Great question, many say that you cannot get your B12 from plant foods, however, new research done on Hippophae rhamnoides aka. Sea Buckthorn, shows that this special plant may actually be a viable Vitamin B12 host in humans. There are many types of B Vitamins and they are all essential for health, and almost all (if not all) can be found in abundance in plant foods! At the end of this article, we’ll go through all of the B Vitamins, and what plant foods are high in them, but for now, let’s get back to covering B12… Below is an abstract from an experiment conducted on Sea Buckthorn and how it is proven to be a good vegetarian preventative for Vitamin B12 deficiency in vegans and vegetarians!

 

Abstract

Vitamin B12 is an essential nutrient in human dietary, as it has an important role in promoting carbohydrate and normal fat metabolism, as well as it is essential in the formation of red blood cells, and the normal functioning of the nervous system. Naturally occurring vitamin B12 is only found in animal products such as meat, milk, dairy products, fish, oysters and clams, but it is well-known for its absence in plant-based foods. Therefore, strict vegetarians (vegans) are at higher risk for developing cobalamin deficiency. Due to the need for investigation and accurate determination of vitamin B12 in plant matrices, a HPLC-UV method with a combined purification and concentration step by immunoaffinity column (IAC) was developed. The method demonstrated linear response with r2 > 0.994, with LOD and LOQ values 0.003 μg/ ml and 0.010 μg/ ml, respectively. The validation studies shows very good specificity and accuracy, as well as precision. Actinorhizal plants, such as Hippophae rhamnoides are symbiotic with actinobacteria Frankia Alni, they are potential hosts for vitamin B12. The method was applied in several plant samples, but significant amounts of vitamin B12 were detected only in Hippophaes rhamnoides (37 μg/ 100 g dry weight). These initial findings provide the basis for detection of vitamin B12 also in other plants, and can be a good measure of prevention for the vitamin B12 deficiency in vegetarians.

Are Stem Cells For Real?

Stem cells can seem like some gimmick created to promote big company agendas with their promise of eternal youth, BUT they might actually be all they a cracked up to be, and they won’t break the bank either.

How is a Stem Cell Made?

Well in this case, a viable specimen, such as the piece of the apple tree, is taken. This piece of the tree is called the explant. There is then an incision made on the explant which stimulate new cells to grow in attempts of the heal the wound, creating what they call a callus. This did not happen in the stevia group, however, which appeared to be a complete kill off after seven days.

According to the University, they say we are not at a stage where we can prescribe whole leaf, liquid stevia extract to treat Lyme Disease and more tests need to be done.
That’s not to say you have to avoid it in your diet as there are many other health benefits!

-Coconut Vegan Whipped Cream-

Nothing says ‘holidays’ more than whipped cream accompanying a delicious and fragrantly spicy, baked dessert. But who wants to sacrifice the healthy eating trend they’ve had going on since summer? With just a few tricks, it is delightfully simple to make homemade Coconut Vegan Whipped Cream.

 

Ingredients:

  • 1 can full-fat coconut milk, chilled for 24 hours*
  • 1 to 2 tablespoons organic maple syrup to taste
  • 1 vanilla bean, scraped or 1/2 teaspoon pure vanilla extract

Directions:

  1. Chill the can of coconut milk in the fridge for at least 24 hours. Some cans can be “duds”, so it is always nice to keep an extra can in the fridge just in case.
  2. Chill your mixing bowl in the freezer for at least an hour before mixing
  3. After chilling the can, turn it upside down and open from the bottom. The water and cream will separate and you can pour the water into a container to save for later. *Vegan smoothies or coconut ice cubes are a good use for the extra water!
  4. Scoop the solid white vegan coconut cream into the bowl.
  5. Using an electric hand mixer, beat the cream until fluffy and smooth. Add in maple syrup to taste and vanilla.
  6. Place vegan coconut whipped cream in fridge until ready to use. It will firm when chilled and soften at room temperature. This will keep in the fridge in a sealed container for up to 1 week or you can freeze for up to 1 month. After chilling in the fridge, allow it to sit at room temperature until it softens slightly and then you can re-whip it as needed. Enjoy!
